My Holiday Treats… P.s I’m Engaged!

I love coming home for the holidays. Seeing my family and friends that I haven’t seen in awhile. And this year I have something very special to celebrate… I’m engaged! Wooo hooo!!! You know those 4.5 years pining for a diamond have finally paid off! I put my time and was greatly rewarded. I kid I kid. I’m very much in love and so happy. I wonder if I can get my wedding in a magazine? Or Say Yes to the Dress? It is right by my house in Atlanta!

I will say it is funny though, Scott and I are so much nicer now to each other, and he seems to have gotten more attractive! hahah! I have a few photos to post and will continue.

On another note I want to share with you the culinary treats I will be making when I go home. I have been making these for a few years and they are an explosive hit. Check out Epicurious.com This site is the best. It is a compilation of recipes from great magazines such as Gourmet, Bon Appetit, Food and Wine and many more.

Pumpkin Cheesecake: I wish I had a picture, ut trust me it’s delicious and looks like a oiece of art. We the cake is cooled and ready to be served you dribble carmel on the top and run through it with a knife to get a fantastic design. The crust is made with gingersnap cookies and pecans! The cookies and nuts give it such a perfect holiday spice taste. I also sub some of the regular cream cheese with low fat or fat free and mix it with the regular. You can’t tell the difference and it makes it just a little less bad for you 😉

Mexican Wedding Cake Cookies:

A big hit

You may have heard them referred to as other things like snowballs or wedding cookies. Don’t be fooled by imitations these are the best! I always have to make a double batch, because about 6 people intend on taking some home. They are made with mostly butter, powdered sugar, and toasted pecans. These cookies literally melt in your mouth and they make such a pretty display.

I always find it helpful on any recipe site to search by rating. I know that by doing this I will not be disappointed in what I make. Also, always check the reviews. You will be surprised that some reviews have great advice. for example adding more nutmeg to the dish because the recipe doesn’t call for enough or use a different kind of pan because the one the recipe recommends isn’t the best option. I have been able to perfect recipes by doing this!
